Atkins diet food recipes for appetizers : Greek Chicken

Ingredients

  1. 1 pound boneless chicken
  2. ½ cup crumbled Feta cheese (3 grams of carbs)
  3. ½ tablespoon dried oregano (0.5 grams of carbs)
  4. 1 tbsp lemon juice (1.3 grams of carbs)
  5. 1 tbsp oil
  6. salt and pepper
  7. 1 cup chicken broth
  8. ½ cup tomato diced (5.8 grams of carbs)
  9. 1 cup fresh spinach (2.4 grams of carbs)

Directions

  1. Batter the chicken.
  2. Combine the feta, lemon and oregano and spread over chicken.
  3. Fold the chicken to enclose filling. Use a toothpick to hold the filling.
  4. Meanwhile, heat the oil in a skillet.
  5. Add the chicken and fry it until brown.
  6. Mix the chicken broth, tomato and spinach and pour in a skillet and heat until boiling.
  7. Gradually reduce the boiling.
  8. Cover the chicken and diminish the heat. Simmer for 10 minutes.

Ingredients

  1. 1 cup mayonnaise
  2. 1 cup parmesan cheese
  3. 1 can artichoke hearts

Directions

  1. Cut the artichoke hearts into small pieces and mix them with the mayonnaise and cheese.
  2. Bake at 350° F for one hour.
  3. To add some diversity, you can add some well drained crabmeat, some cream cheese or drained frozen spinach (on the condition of reducing the mayonnaise).

Ingredients

  1. 5 cups cooked chicken, boned and cut into chunks
  2. 1 cup chopped celery
  3. 1¼ cups chopped onion
  4. 1 cup chopped red or green bell pepper
  5. 1 cup chopped fresh cilantro
  6. 1 cup mayonnaise
  7. 4 ripe avocados
  8. ½ fresh lime, juiced
  9. 1¼ teaspoon pepper
  10. 2 teaspoons ground cumin
  11. ¾ teaspoon garlic powder
  12. optional, 3 jalapeno peppers (hot green or red pepper of southwestern United States and Mexico), minced

Directions

  1. Combine chicken chunks, celery, onion, bell pepper, cilantro and mayonnaise in a large bowl.
  2. In another bowl, squash avocados with the lime juice (as a mash), leaving some chunks.
  3. Add this to the chicken mixture.
  4. Add pepper, cumin, garlic powder and jalapenos.
  5. Serve immediately or cover with plastic wrap and refrigerate until ready to serve.
