Ingredients
- 1 pound boneless chicken
- ½ cup crumbled Feta cheese (3 grams of carbs)
- ½ tablespoon dried oregano (0.5 grams of carbs)
- 1 tbsp lemon juice (1.3 grams of carbs)
- 1 tbsp oil
- salt and pepper
- 1 cup chicken broth
- ½ cup tomato diced (5.8 grams of carbs)
- 1 cup fresh spinach (2.4 grams of carbs)
Directions
- Batter the chicken.
- Combine the feta, lemon and oregano and spread over chicken.
- Fold the chicken to enclose filling. Use a toothpick to hold the filling.
- Meanwhile, heat the oil in a skillet.
- Add the chicken and fry it until brown.
- Mix the chicken broth, tomato and spinach and pour in a skillet and heat until boiling.
- Gradually reduce the boiling.
- Cover the chicken and diminish the heat. Simmer for 10 minutes.

- 1 cup mayonnaise
- 1 cup parmesan cheese
- 1 can artichoke hearts
Directions
- Cut the artichoke hearts into small pieces and mix them with the mayonnaise and cheese.

- To add some diversity, you can add some well drained crabmeat, some cream cheese or drained frozen spinach (on the condition of reducing the mayonnaise).

Ingredients
- 5 cups cooked chicken, boned and cut into chunks
- 1 cup chopped celery
- 1¼ cups chopped onion
- 1 cup chopped red or green bell pepper
- 1 cup chopped fresh cilantro
- 1 cup mayonnaise
- 4 ripe avocados
- ½ fresh lime, juiced
- 1¼ teaspoon pepper
- 2 teaspoons ground cumin
- ¾ teaspoon garlic powder
- optional, 3 jalapeno peppers (hot green or red pepper of southwestern United States and Mexico), minced
Directions
- Combine chicken chunks, celery, onion, bell pepper, cilantro and mayonnaise in a large bowl.
- In another bowl, squash avocados with the lime juice (as a mash), leaving some chunks.
- Add this to the chicken mixture.
- Add pepper, cumin, garlic powder and jalapenos.
- Serve immediately or cover with plastic wrap and refrigerate until ready to serve.
