Recipes for Atkins Diet Desserts

Atkins diet desserts shouldn't miss from daily meals, on one condition: few carbohydrates or none at all.

Two of the Atkins diet desserts are: Chocolate Torte and Banana Spice Cake.

Chocolate Torte

Ingredients

  1. 6 egg whites
  2. ½ teaspoon cream of tartar
  3. 1½ cups Splenda
  4. ¼ cup slivered almonds
  5. 1 teaspoon almond extract

Ingredients for the Chocolate Cream Filling

  1. 1½ cups heavy cream
  2. ¼ cup unsweetened cocoa
  3. ½ cup Splenda
  4. ¼ cup Creme de Cacao
  5. ½ teaspoon vanilla extract

Directions

  1. Mix splenda, vanilla, heavy cream, cocoa in a mixing bowl.
  2. Beat until thick.
  3. Add creme de cacao and continue the beating process until the mixture is stiff.
  4. For the torte, mix egg whites, almond extract and cream of tartar in a mixing bowl until soft peaks form.
  5. Sprinkle splenda gradually.
  6. Continue stirring until stiff.
  7. Spray cookie sheets with PAM.
  8. Spread the meringue in 6 inch circles.
  9. Bake in preheated oven (to 300° F) for 25 minutes or until lightly browned.
  10. The meringues need to be removed immediately and set aside. Place meringue on serving plate.
  11. Spread 1/3 of chocolate cream. The operation will be repeated: another layer and another 1/3 of filling until filling and layers are used.
  12. Finally, sprinkle almonds on top. Refrigerate for several hours or overnight.

Banana Spice Cake

Ingredients

  1. ½ cup butter (1 stick) brought at room temperature
  2. ½ cup cream cheese (full fat) - softened
  3. 1 cup granulated Splenda
  4. ½ cup Diabetisweet
  5. 1/8 teaspoon ground cloves
  6. 1 teaspoon Brown SugarTwin
  7. 5 eggs, at room temperature
  8. 2 cups almond flour
  9. 1 teaspoon baking powder
  10. 1 teaspoon cinnamon
  11. 2 teaspoons sugar free banana extract
  12. 1 teaspoon sugar free vanilla extract

Directions

  1. Mix the butter, cream cheese and sweeteners and beat well.
  2. Add the eggs gradually and continue beating.
  3. Add the almond flour with baking powder and spices and mix well.
  4. Then add the banana and vanilla extracts.
  5. Pour into greased 9"-10" Springform pan (or 9" round cake pan) and bake at 350° F for about 50 minutes.
