Two of the Atkins diet desserts are: Chocolate Torte and Banana Spice Cake.
Chocolate Torte
Ingredients
- 6 egg whites
- ½ teaspoon cream of tartar
- 1½ cups Splenda
- ¼ cup slivered almonds
- 1 teaspoon almond extract
Ingredients for the Chocolate Cream Filling
- 1½ cups heavy cream
- ¼ cup unsweetened cocoa
- ½ cup Splenda
- ¼ cup Creme de Cacao
- ½ teaspoon vanilla extract
Directions
- Mix splenda, vanilla, heavy cream, cocoa in a mixing bowl.
- Beat until thick.
- Add creme de cacao and continue the beating process until the mixture is stiff.
- For the torte, mix egg whites, almond extract and cream of tartar in a mixing bowl until soft peaks form.
- Sprinkle splenda gradually.
- Continue stirring until stiff.
- Spray cookie sheets with PAM.
- Spread the meringue in 6 inch circles.
- Bake in preheated oven (to 300° F) for 25 minutes or until lightly browned.
- The meringues need to be removed immediately and set aside. Place meringue on serving plate.
- Spread 1/3 of chocolate cream. The operation will be repeated: another layer and another 1/3 of filling until filling and layers are used.
- Finally, sprinkle almonds on top. Refrigerate for several hours or overnight.
Banana Spice Cake
Ingredients
- ½ cup butter (1 stick) brought at room temperature
- ½ cup cream cheese (full fat) - softened
- 1 cup granulated Splenda
- ½ cup Diabetisweet
- 1/8 teaspoon ground cloves
- 1 teaspoon Brown SugarTwin
- 5 eggs, at room temperature
- 2 cups almond flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 teaspoons sugar free banana extract
- 1 teaspoon sugar free vanilla extract
Directions
- Mix the butter, cream cheese and sweeteners and beat well.
- Add the eggs gradually and continue beating.
- Add the almond flour with baking powder and spices and mix well.
- Then add the banana and vanilla extracts.
- Pour into greased 9"-10" Springform pan (or 9" round cake pan) and bake at 350° F for about 50 minutes.
