Atkins Diet Foods: Soups, Salads, Snacks

Soups, salads and snacks make part of the atkins diet foods too. In the following recipes you can find a starting point for your own recipes.

To vary the Atkins diet foods, soups are recommended on a regular basis to Atkins dieters.

Avocado Gazpacho Smoothie

Igredients

  1. 1 can (14.5 oz) less-sodium chicken broth
  2. ½ ripe avocado, peeled and seed removed
  3. 1 teaspoon minced (dried) onions
  4. 2 tablespoons onion (fresh)
  5. 2 tablespoons green pepper
  6. 1 tablespoon lime juice
  7. ½ teaspoon celery seed
  8. ½ teaspoon fresh ground black pepper
  9. ¼ teaspoon red pepper flakes
  10. ¼ teaspoon ground cumin
  11. ½ teaspoon salt
  12. 1 tablespoon Splenda

Directions

  1. Put the onion and green pepper in a food processor, then set them aside.
  2. Also using a food processor, mix the chicken broth and avocado until no avocado chunk is left (just liquid).
  3. Add the rest of the ingredients (except onion and green pepper) over the liquid and blend again.
  4. Finally, mix in the diced oniond and green pepper with a spoon.
  5. Add salt, lime juice and any other spice, according to taste.
  6. Place in the fridge for 2 hours.
  7. Serve with sour cream or with sprinkled diced green onions.

Fresh Salsa

Ingredients

  1. 2 tomatoes chopped into small pieces
  2. ¼ — ½ cup red onion finely chopped
  3. ½ jalepeno or serrano green pepper finely chopped
  4. 1 clove chopped fresh garlic (eventually)
  5. 1 tablespoon chopped fresh cilantro
  6. the juice from salad
  7. An 1 small lime or ½ lemon
  8. salt and pepper to taste

Directions

  1. Mix the ingredients in a bowl and place in the fridge for a few hours.
  2. It can be added on cheese omletes, on fish, to guacamole, too. It is considered a savory low-carb salad.

Induction Friendly Salad Dressing

1 cup of mayonnaise and 3 tablespoons of sour are combined with the following ingredients:

Ingredients

  1. ½ cup cucumber with a bit of dill — for obtaining creamy cucumber
  2. one small spring onion, one small clove of garlic, salt, pepper — to get a ranch dressing
  3. one spring onion, salt, pepper, paprika — for a creamy onion dressing
  4. one spring onion,one clove garlic, cajun spice, green tabasco peppers — for an extremely hot dressing (it makes a great dip for celery)
  5. 1 wedge of tomato, ¼ cup crumbled bacon — for a Bacon Lettuce Tomato dressing.

Directions

  1. All the ingredients are blended into a food processor until smooth.
  2. Use as dressing for chicken, fish, beef.
