Avocado Gazpacho Smoothie
Igredients
- 1 can (14.5 oz) less-sodium chicken broth
- ½ ripe avocado, peeled and seed removed
- 1 teaspoon minced (dried) onions
- 2 tablespoons onion (fresh)
- 2 tablespoons green pepper
- 1 tablespoon lime juice
- ½ teaspoon celery seed
- ½ teaspoon fresh ground black pepper
- ¼ teaspoon red pepper flakes
- ¼ teaspoon ground cumin
- ½ teaspoon salt
- 1 tablespoon Splenda
Directions
- Put the onion and green pepper in a food processor, then set them aside.
- Also using a food processor, mix the chicken broth and avocado until no avocado chunk is left (just liquid).
- Add the rest of the ingredients (except onion and green pepper) over the liquid and blend again.
- Finally, mix in the diced oniond and green pepper with a spoon.
- Add salt, lime juice and any other spice, according to taste.
- Place in the fridge for 2 hours.
- Serve with sour cream or with sprinkled diced green onions.
Fresh Salsa
Ingredients
- 2 tomatoes chopped into small pieces
- ¼ — ½ cup red onion finely chopped
- ½ jalepeno or serrano green pepper finely chopped
- 1 clove chopped fresh garlic (eventually)
- 1 tablespoon chopped fresh cilantro
- the juice from salad
- An 1 small lime or ½ lemon
- salt and pepper to taste
Directions
- Mix the ingredients in a bowl and place in the fridge for a few hours.
- It can be added on cheese omletes, on fish, to guacamole, too. It is considered a savory low-carb salad.
Induction Friendly Salad Dressing
1 cup of mayonnaise and 3 tablespoons of sour are combined with the following ingredients:
Ingredients
- ½ cup cucumber with a bit of dill — for obtaining creamy cucumber
- one small spring onion, one small clove of garlic, salt, pepper — to get a ranch dressing
- one spring onion, salt, pepper, paprika — for a creamy onion dressing
- one spring onion,one clove garlic, cajun spice, green tabasco peppers — for an extremely hot dressing (it makes a great dip for celery)
- 1 wedge of tomato, ¼ cup crumbled bacon — for a Bacon Lettuce Tomato dressing.
Directions
- All the ingredients are blended into a food processor until smooth.
- Use as dressing for chicken, fish, beef.
