Beef Roll Ups
It is one of the main Atkins food recipes, popular among Atkins believers.
Ingredients
- 2 lbs beef round, ¼ inch thick
- ½ cup basil, minced, fresh
- 2 oz roasted red pepper
- ¼ cup parmesan cheese
- 6 slices prosciutto (very thin)
- 2 cloves garlic
- ¼ cup sliced onion
- 2 cups tomato sauce
Directions
- Pound beef very thin, add salt and pepper, put red pepper on each slice, top with basil and parmezan, then roll tightly.
- Heat a little oil, garlic and onion in a pan.
- Add steak rolls and brown on all sides.
- Remove steak rolls and place them in a baking dish with garlic and onion. Pour the tomato sauce on top. Cover the dish with aluminum foil and bake at 300° F for one and a half hour.

Bacon Cheeseburger Quiche
Ingredients
- 1 lb hamburger (very lean)
- 1 small chopped onion
- 4 slices cooked bacon (crispy), splitted in bits
- 3 eggs
- ½ cup mayonnaise
- ½ cup half-n-half
- 8 oz shredded chedder or swiss cheese garlic powder to taste (optional)
- white pepper
Directions
- Brown hamburger in onion.
- Remove and mix with bacon pieces until a fine mix (larger clumps are to be broken down) is obtained. Drain grease in excess.
- Preheat the oven to 350° F.
- Put the remaining ingredients in a mixer bowl whipp. Pour the mixture over the beef ”žcrust”? and bake for 40-45 minutes until the top is browned.
- Slice after cooling for 15 minutes. This can be packaged in plastic containers for meals quickly microwaved over the next 3-5 days.
Turkey Broccoli Casserole
Ingredients
- 2 packages frozen broccoli (10 ounces)
- 2 cups cooked and diced turkey
- 1 can cream of mushroom soup (10 ounce)
- ½ cup heavy cream
- ½ cup Cheddar cheese (grated)
Directions
- Preheating the oven, cook the broccoli according to package directions.
- Layer in 12 x 8 inch baking dish. Spread the turkey evenly on top.
- Combine the soup with the cream and mix until smooth, then pour over turkey.
- Sprinkle grated cheese on top and bake for 30 minutes.

Bean and Brussels Sprouts Casserole
Ingredients
- 1 lb Brussel sprouts
- 8 ozs frozen French cut green beans
- 1 can waterchestnuts (8 oz) sliced
Ingredients for the Sauce
- ½ cup half and half
- 8 oz cream cheese
- ½ cup grated Cheddar cheese
- 1 Dash salt
- nutmeg
- grated cheddar cheese (for garnish)
Directions
- Cut the yellow leaves off from the Brussels sprouts.
- Put the sprouts and green beans in a saucepan with ½ cup boiling salted water, cover and cook for 5 minutes until vegetables are juxt cooked through and still bright green.
- Then add the water chestnuts and cook 1-2 minutes longer or until heated through. Keep hot in a serving bowl.
- Prepare the sauce by heating half-and-half in saucepan and by adding the cheeses and then cooking over low heat.
- Sprinkle salt and nutmeg.
- Pour the sauce over the vegetables.
- Sprinkle with grated cheese and the dish is ready to be served.
Basic Quiche
Ingredients
- 1 teaspoon Butter
- 1½ cups Heavy cream
- 1 cup Cheddar cheese (grated)
- 4 eggs
- 2 teaspoons Dried basil
- 2 teaspoons onion (chopped)
- ¾ teaspoon paprika
- ¼ teaspoon garlic powder
- 1 pinch salt and pepper
Directions
- Preheat the oven to 325°F (160°C).
- Spread buter on a pie pan (sides of a 9" or 230mm).
- Put cream in a medium saucepan and heat until scalded.
- Stirr in the grated cheese.
- When cheese is melted, add basil, onion, paprika and garlic powder.
- Remove from heat and cool for 5 minutes
- Add the eggs and mix in thoroughly.
- Add salt and pepper.
- Pour the mixture into a pie pan, and bake in oven until custard is set (about 50 minutes).
Scalloped Cauliflower
Ingredients
- 1 bag frozen cauliflower
- ¼ cup onion, finely chopped
- ¼ cup butter
- 8 oz cheddar cheese, shredded
- 4 oz cream (heavy)
- salt and pepper
Directions
- Preheat the oven to 350° F.
- Pour cold water over frozen cauliflower in order to separate its pieces.
- Lay half of the cauliflower on the bottom of a casserole.
- Add salt and pepper.
- Lay half of the onions and thin slices of butter.
- Add half of the cheese and repeat layers.
- Pour the cream on top and bake for 45 min.
- Scrumbled bacon can be added 10 min before completion.
